Let’s dive into this simple and scrumptious recipe that’s sure to become a favourite.
Ingredients
- 500 g raw shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper
- Salt and black pepper, to taste
- 8 small soft tortillas
For the Mango Salsa:
- 1 ripe mango, diced
- 1 avocado, diced
- 1 small red onion, finely chopped
- 1 small red chilli, deseeded and finely chopped
- Juice of 1 lime
- A handful of fresh coriander leaves, chopped
- Pinch of salt
Optional Toppings:
- Fresh coriander leaves
- Lime wedges
- Sour cream or Greek yoghurt
Method
- Prepare the shrimp: In a bowl, combine the shrimp with olive oil, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to coat the shrimp evenly with the spices. Let it marinate for about 10 minutes to enhance the flavours.
- Make the mango salsa: In another bowl, combine the diced mango, avocado, red onion, chilli, lime juice, and chopped coriander. Add a pinch of salt and mix gently to incorporate all the ingredients without mashing the avocado. Set aside for flavours to meld.
- Cook the shrimp: Heat a non-stick frying pan over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes on each side, until they turn pink and opaque. Remove from the heat once cooked through.
- Warm the tortillas: While the shrimp are cooking, heat the tortillas in a dry skillet over medium heat for about 30 seconds on each side, or until they’re warm and slightly charred in spots.
- Assemble the tacos: Place a generous spoonful of mango salsa on each tortilla, followed by a few spicy shrimp. Add any additional toppings you desire, such as fresh coriander, lime wedges, or a dollop of sour cream or Greek yoghurt.
- Serve immediately: These tacos are best enjoyed fresh, so serve them immediately while the tortillas are warm and the shrimp are juicy and hot.
Spicy Shrimp Tacos with Mango offer a delightful interplay of heat and sweetness, wrapped in the comforting embrace of a warm tortilla. They make for an exciting meal that’s as nutritious as it is delicious, appealing to both tropical flavour enthusiasts and taco lovers alike.
