Grilled chicken is a versatile and delicious dish, but when paired with a zesty pepperoncini garlic butter, it becomes something truly special. This recipe is quick to prepare and sure to impress.
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 100g unsalted butter, softened
- 3 cloves garlic, minced
- 60g pepperoncini peppers, finely chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon lemon zest
- Juice of 1/2 lemon
Method:
- Preheat your grill to medium-high heat. Season the chicken breasts with salt and pepper, then drizzle with olive oil to coat evenly.
- In a small bowl, combine the softened butter, minced garlic, chopped pepperoncini peppers, parsley, lemon zest, and lemon juice. Mix until well combined and set aside.
- Grill the chicken breasts for 6-7 minutes per side, or until they reach an internal temperature of 75°C and are cooked through. The chicken should have nice grill marks and be slightly charred around the edges.
