When the symphony of flavours combines just right, you get a salad that’s not only a feast for the eyes but also a delight for the palate. This Blackberry Balsamic Grilled Chicken Salad with Crispy Fried Goat Cheese is a gourmet dish that brings a touch of sophistication to your dining table, whether you’re entertaining guests or simply treating yourself to a special meal.
Ingredients:
- 2 boneless chicken breast fillets
- 150g mixed salad greens
- 1 cup (150g) blackberries
- 1/4 cup (60ml) balsamic vinegar
- 1 tablespoon (20ml) olive oil
- 100g goat cheese, sliced into rounds
- 1/2 cup (50g) panko breadcrumbs
- 2 eggs, beaten
- 1/4 cup (60ml) vegetable oil for frying
- Salt and pepper to taste
For the Balsamic Dressing:
- 3 tablespoons (60ml) balsamic vinegar
- 2 tablespoons (40ml) olive oil
- 1 teaspoon (5ml) honey
- Salt and pepper to taste
Instructions:
- Begin by marinating the chicken breasts in balsamic vinegar for at least 30 minutes to infuse them with flavour.
- Grill the chicken over medium heat until cooked through, about 6-7 minutes per side, depending on thickness. Let it rest before slicing into strips.
- Prepare the crispy goat cheese by dipping each round first in the beaten eggs, then coating with panko breadcrumbs.
- Heat vegetable oil in a pan over medium heat and fry the goat cheese until golden and crispy. Drain on paper towels.
- Whisk together the ingredients for the balsamic dressing in a small bowl. Adjust seasoning with salt and pepper.
- Toss the salad greens and blackberries with the dressing, then arrange them on plates.
- Top the salad with slices of grilled chicken and rounds of crispy fried goat cheese.
